Recipe: Immune-boosting Bone Broth

There’s nothing better than a warm meal or drink on a cold, winter day. I’d be lying if I said these kinds of days don’t make me crave a cup of hot chocolate with double whip, but instead of loading up on sugar and chocolate like my brain is telling me to do, I try to do what my body tells me to do which is to protect myself from the viruses and bugs that go around this time of year and fill up on something nutritious and delicious! Bone broth is packed with immune-boosting minerals, and collagen which can help improve gut health and reduce inflammation – something I happen to believe we could all use.

Ingredients:

2 lbs chicken bones (1 whole carcass)
1 onion, diced
2 celery stalks, chopped
1 carrot, chopped
3 garlic cloves, chopped
1 tbsp apple cider vinegar
1 cup parsley
salt & pepper, to taste
6 cups of water

Directions:

  1. Add chicken bones and all remaining ingredients to slow cooker.
  2. Set slow cooker to low and let cook for 12 hours
  3. After 12 hours, strain broth through strainer and discard remaining vegetables. Allow broth to cool, and remove fat from the top. Freeze extra for later use.
