Recipe: Healthy Pineapple Popsicles

Am I the only one who’s cravings for something sweet get out of control in the summer heat? I don’t think so…

After dinner dessert is a constant struggle for my patients, and I am definitely not one for deprivation. Depriving yourself of a little dessert every now and then can easily lead to a downward spiral. Fruit was once the candy of the Earth, and there’s no reason for it to lose its title now. This healthy and super easy summer recipe is fresh, delicious, and of course….less than five ingredients.

What I love most about this recipe is the balance of ingredients. With some added protein, these delicious popsicles ensure that the inevitable sugar crash from high-sugar desserts is a non-issue. Just one popsicle will surely satisfy a sugar craving AND keep you feeling satisfied way longer than a bowl of sorbet or a bar of chocolate.

Ingredients:

  • 1/2 cup frozen pineapple chunks
  • 1/2 cup plain Greek Yogurt
  • 1 cup unsweetened Coconut Milk

Directions:

1. Blend all ingredient in a blender until smooth

2. Divide evenly into popsicle mold

3. Freeze, indulge, enjoy.

Modifications:

Dairy Free: Instead of Greek Yogurt, substitute Coconut Yogurt

Extra Protein: Add a scoop of your favorite protein powder

Not a fan of coconut? Use 1/2 cup of any fruit!
