Recipe: Watermelon Chia Smoothie

Let’s talk about watermelon! Is there anyone out their who doesn’t love watermelon?? It’s the perfect summer fruit, and a great way to get some extra fluids in you on a hot summer day! Watermelons are made up of 90% water, and are a good source of Vitamin C. If that weren’t enough, watermelons are actually a better source of the powerful antioxidant lycopene than tomatoes (but still, eat your veggies). This low-carb fruit can put a summer spin on salads, cocktails, mocktails and snacks.

So, if you’re looking for a little refreshing bevvie to enjoy this summer, try this one out!

Ingredients:

  • 1 cup watermelon, chopped with seeds removed
  • 1/4 banana, frozen
  • 1/4-1/2 water or unsweetened coconut milk (depending on desired thickness)
  • 1 tsp lemon juice
  • 2 tbsp chia seeds
  • 3-4 mint leaves
  • 1/2 cup crushed ice

Directions:

  • Mix ‘er up in a blender, sit in the sun (with sunscreen) and enjoy!
