It’s a new year ladies and gentlemen! While many decided to put their healthy eating goals on hold between December 25 and January 1st, I decided not to wait. We hosted New Year’s at our house this year so the pressure was on to entertain and feed some hungry bellies. We had young picky eaters and vegetarians on the guest list so I had to think figure out a way to please everyone. It’s probably not a wise idea to test a recipe on houseguests, but I did it anyway…and luckily, it was a hit! These vegetarian take on chicken wings were enjoyed by every guest at the gathering, and I gotta say – they were super easy.

Ingredients:

  • 1 cup flour (any kind, even gluten-free)
  • 1 cup water
  • 2 tsp garlic powder
  • 1 head of cauliflower, cut into pieces
  • 1/2 cup BBQ Sauce
  • 1 tsp olive oil

Directions:

  1. Preheat the oven to 450 dgrees
  2. Combine flour, water and garlic powder
  3. Coat cauliflower pieces in flour mixture and place in a shallow baking pan
  4. Bake for 18 minutes
  5. While it’s baking, combing your BBQ sauce and oil
  6. Remove cauliflower from oven and coat evenly with BBQ mixture
  7. Place back in the oven and bake for another 5-8 minutes
  8. Serve alongside celery and carrot sticks, and a dipping sauce of your choice

There you have it! Easy peasy lemon squeezy cauliflower chicken wings! For more flavors, sub out the BBQ Sauce for Buffalo or hot sauce. This dish is such an easy snack for games night, date night, or any night really….and the best part is, you’ve incorporated another serving of vegetables into your day!
