Recipe: Cinnamon Spiced Pumpkin Seeds

Many of you have been patiently awaiting the return of the Pumpkin Spice Latte…and I’m not going to try to draw comparisons between a smoothie and a latte here (coffee vs. not coffee…big difference). BUT, what I AM going to do is give you yet another way to enjoy that pumpkin flavor during the fall, because who doesn’t love ’em some pumpkin?

This smoothie is DELISH, packed with vitamins A and E (two important antioxidants), and a good protein sources for a breakfast, snack or post-workout shake.

Ingredients:

  • 1 cup unsweetened almond/coconut/oat/cow’s milk (pick your poison)
  • 1/2 cup pureed pumpkin
  • 1 banana (frozen)
  • 1/2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice*
  • 3 tbsp hemp seeds (optional for extra protein)

Directions:

Add all ingredients to your blender and combine until desired texture is achieved. Pour into a glass and drink up!

*If you don’t have pumpkin spice, but do have some extra time – you can make your own! Combine 1/4 cup cinnamon, 4 tsp ground ginger, 4 tsp nutmeg, and 1 tbsp all spice. Store in a spice jar for other Fall-inspired recipes.
