Back To School Recipe: Green Machine Popsicles

We’re nearing the end of the summer, but luckily it looks as though we still have some good weather on the horizon! More sunshine means more outdoor activities and more…popsicles!!! Popsicles are undoubtedly a kid-favorite during the summer, so why deprive them of these delicious treats when they start the school year? Making popsicles at home can be quick, simple, and surprisingly healthy. Including a healthy source of protein, fat, and carbohydrates makes this popsicle a power-house of macro- and micro-nutrients. Whether it’s a quick breakfast, an after-school snack, or just a treat on a sunny day, this popsicle nutritious AND delicious!

What you need:

  1. High-speed blender
  2. Popsicle mold (with sticks included)

Yield: 12 popsicles

Serving Size: 1 popsicle

Ingredients:

  • 1 ½ cups of plain Greek yogurt
  • ¼ cup of pure maple syrup or honey
  • ½ tsp vanilla extract
  • Pinch of salt
  • 1 med. apple
  • 1 med. pear
  • 1 avocado
  • 1 cup of spinach

Directions:

  1. Blend Greek yogurt, maple syrup/honey, vanilla extract and salt until smooth. Pour the mixture evenly into popsicle molds until 1/3 to ½ of the way full.
  2. Blend apple, pear, kiwi, and spinach until smooth and pour evenly into popsicle molds until full.
  3. Cover molds with provided sticks and freeze for at least 6 hours before enjoying!
